Unfortunately neither of them have a driver for Server 2012 and the Win 8 one doesn't work on Server.

Narrowed it down a bit further; only occurs when the hyper-V role is installed in Win Server 2008 R2. Uninstall Hyper-V role and audio recording again works fine.

Yep, just needed removing and plugging into a different port. I suspect the one I had it in was the USB 3.0 port which is not supported natively in Server 2008.
