Which temps seem to be giving yo the most trouble? A bios flash isn't terribly likely to help with temps. Everest Home edition will tell you which bios the board is running. Then its just a matter of cross referencing with the EVGA site. I do however see where the site could definitely be confusing as far as bios updates go. They aren't terribly explicit about bios updates for the board in question. Have you tried there forums (message boards in the community section) Someone there could set you straight.

Now the CPU and NB temps in BIOS have gone haywire , both displaying over 240C

And the other program I was using to monitor temps (Nvidia Monitor) is also broken , its no longer displaying voltgaes or CPU/NB temps

    Thumbs down Evga Support

Seems EVGA is only focused on the 680i boards, very little support for the 590

Before trying to update the bios, do a bios clear, then set optimised defaults. Reboot the system back to the bios and mnake the appropriate changes for your specific configuration. This has worked for me on a few boards when this has happened.
