I've heard of farmers tossing in the odd dead sheep into large vats of cider to improve the flavour.

In this country, the scrumpy (strong farm cider) doesn't keep. We would purchase 10-25 Litres at a time straight from the farm and it would keep for about a week tops at room temp, and upto 2 weeks if stored in a large chiller (or fridge). I've not heard of adding sugar (or yeast??), the sugar natuarally present in the apples should be more than enough for fermentation - but then I like really dry cider (not sweet).

And of course, drink with caution. This stuff is designed to be administered in small quantities The very best stuff drinks like pop until you go to stand up and then you just wonder why your legs don't work anymore whilst rolling around on the floor laughing

Well how does one Make non alcoholic cider? I didn't aquire a taste for alcohol or of that type of beverage, As My mother was an alcoholic ever since she had a hysterectomy(The surgeon she felt just gutted Her like a Fish and didn't even leave anything so she could have sex anymore and from then on She said she was an "It" and not a Woman, The surgeon took everything and just sealed Her up She said and She's been dead since 1998 and Yes I miss Her).

Ok, I was making scrumpy not cider. And don't worry about the timing I won't have apples till October! We can work something out by then.

Looks like the general agreement is wood casks. I have a mission! But I think I'll hold off on the dead sheep thing. Maybe not spray for cottling (sp) moths and let the worms have their way with the apples? yum yum

I always thought if you added yeast and suger you ended up with something more like brandy, but I prefer a good hard cider or fresh scrumpy I guess. The stuff I made would only last a few days then went vinegar like. However if I could find some smallish wood casks I'd like to try various recipes/methods. Variety is the spice of life!

Both Yeast and Sugar are necessary for the fermentation to make alcohol... ours came with both naturally! Some folks like to control the fermentation process a little more carefully and only use fresh apples, and then add the Yeast and Sugar... I guess it's like home brew beer, everybody has thier own way with it.

Cider is made by squeezin' the apples in a press, Juice is after you put it through a strainer to get all the 'foggy bits' our. Hard Cider is when you ferment... well either one, I suppose... you can increase the alcohol content by adding more Yeast and Sugar than occurs naturally or by 'Harvesting' the ice when you freeze it, although that does cut down on the carbonation that happens during the fermentation process. Brandy is made through the distillation process.

Now, to get Cider with carbonation and without alcohol, you go to the Store and get some Martinelli's! I have no idea how to do it otherwise, unless you get one of those CO2 infusers 'nStuff.
